My path started at Le Cordon Bleu in Dallas, where I fell in love with the artistry of food. I spent seven years in professional kitchens, learning the ins and outs of culinary technique. But it wasn’t until I entered the world of protein sales that something truly clicked. I developed a deeper curiosity for the origin, quality, and integrity of meat—the kind of curiosity that can’t be ignored.

That curiosity led me to craft butchery. It was no longer just about cooking. It was about understanding the animal, respecting every cut, and taking control of the process from pasture to plate.
